Profile

Amaranth Elena's Rojo

Amaranthus cruentus · deep burgundy plumes

Deep burgundy-red plumes rising 2–4 feet. Edible grain, edible leaves, visual architecture. One of the most beautiful plants in this garden.

Elena's Rojo is an ornamental grain amaranth with deep burgundy-red plumes that rise dramatically above surrounding plants. The color is intense — a dark, saturated red-purple that shifts in different light. The large seed heads feed birds throughout late season and the leaves and seeds are edible.

As a structural plant, Elena's Rojo provides vertical architecture and mid-to-upper canopy visual interest that shorter flowering plants cannot. It earns its container space through presence alone, and delivers functional ecological and culinary value alongside that presence.

The dense seed heads attract goldfinches, house finches, and sparrows from late summer through fall — birds that also feed on insects across the garden. The vertical structure provides habitat and orientation points for flying insects navigating the garden system.

Why This Plant Is Here

Amaranth Elena's Rojo has a specific role in this year's garden: flavor, beauty, pollinator support, story, or seasonal production.
